Pecan Snowballs

These have to be one of the most delicious and easiest cookies to make!

They are not too sweet, but they are buttery.

There are a thousand recipes for these, but the BEST ones are baked in a slow oven! And ha at least one cup of nuts!

Some people called them wedding cookies. Some people make them into little crescents.

I make them look like dirty snowballs.

Because that’s the way my momma made ’em.

Try them!!!!!

First you need these items:

I put the softened butter,

add the vanilla, a pinch of salt (I always add a little salt!), and the powdered sugar

and mixed it all up.

Add the flour: when its the right consistency, it will look like this:

Now, get those nuts chopped, finely. Make sure they are nice and fresh. Nothing worse than old, stale nuts.

I used a knife, but if you have a nut chopper, go ahead and use it!

Add the nuts, and beat till just mixed.

Now the fun part: roll into snowballs, or mudballs, or whatever you used to make as a kid and put them on a cookie sheet… they can be kind of close because they aren’t going to get any bigger than what you made them.

Cook for about 50 minutes, take out and let them cool. Sprinkle liberally with powdered sugar.

1 c. butter
1/2 c. powdered sugar
1 3/4 c. flour
1 tsp. vanilla
1 c. chopped nuts

Instructions
Mix ingredients in order given. Roll in small balls or drop from end of spoon and flatten on cookie sheet and bake for 50 minutes at 250 degrees. When done and cool, roll in powdered sugar.
