Boiled Cookies

The 2nd cookie recipe and this one will satisfy your chocolate needs!

I have lived on these on long trips. I have craved these.

I am lucky.

I have a friend who makes these for me when she knows I need them.

In fact, she made them for me for you on this Happy Monday!

So here goes.

You will need these items:

2 c. sugar 1 stick (1/4 lb) butter (or margarine)
4 Tbs cocoa 1/2 c. milk
1/2 c. peanut butter 2 tsp. vanilla 2 – 2 1/4 c. oats
optional – pecans and/or coconut


Mix sugar and cocoa together in saucepan.


Add milk and butter and place over medium to high heat. Stir as you bring to boil. Reduce heat a little, but continue to boil as you stir for TWO minutes. Remove from heat.

Stir in vanilla (pure or imitation) and peanut butter (smooth or crunchy). Make sure the peanut butter melts and then stir in the oats (quick cooking or regular) and optional ingredients.

Mix well and spoon onto wax paper or aluminum foil.

Let cool. Sometimes mine turn out a little soft (probably when I don’t boil long enough), but still yummy – just harder to pick up and eat. If cook too long, they will be crumbly. Experiment
