Because I am out of town, I asked Catherine M. to give you one of her easy, no fail, delicious casseroles, straight from her kitchen.

I bet there isn’t a single child who wouldn’t LOVE this!

You will love this, because you can have it on the table in less then 30 minutes!

Here’s what you will need:

1/2 of a rotisserie chicken from Sam’s, cut up in pieces. You can use less chicken if you would like.

Cut 3 slices of Velveeta cheese (can use more if like it more cheesy)

Cook 8oz of pasta and drain the water off, leaving some to keep the dish moist (see the picture how there is some water bubbling?) Add the cheese to the pasta and 1/2 of 7 oz. can of stems/pieces mushrooms (put the rest in freezer to use next time).

Add the cream of mushroom soup and chicken. Stir until all mixed adding salt and pepper to taste.

Cooked 10 minutes at 80% in microwave, stirring a couple of times… 8 minutes would have been plenty of time…

Serve with a salad and a green vegetable!
