The Best Ever Cookie

You CANNOT mess these cookies up they. They are absolutely delicious. You can add almost whatever you want to them, with the exception that you must keep the eggs. THey are good for you!!!

Eat them for desert, breakfast, pack them in your kids lunches and put boxes them in the freezer (already cooked) until you want to eat them!

Someone brought these to my house when Jake went to Heaven. He would have loved them!

1 cup Sugar
1 cup Brown sugar
1 cup Oil (I use canola)
1 teaspoon Vanilla
1 teaspoon Salt
2 whole Eggs
1 1/2 cups Flour (I use part wheat and part unbleached white flour)
1 teaspoon Soda
1/2 teaspoon baking powder
3 cups Oatmeal (I used whole grain old fashioned)
1 cup Pecans, chopped
1/2 cup Coconut

Instructions
Stir with mixer the sugars and oil. Add vanilla, salt, and eggs. Once mixed well add the flour, soda, and baking powder. Add the oatmeal, coconut, and nuts. Bake at 350 for 8-10 minutes on a greased cookie sheet.
