Chicken Almondine

This is the last of the September Casseroles!

I hope you have tried them. I hope they become favorites in your hope..

One last one and its a goodie…I tried this recipe the first time at Tammy N.’s house. (Thanks Tammy!)

It was amazingly good.

And when I cooked it at home it was a hit.

Again, it became one of my sons’ favorite dishes. A certain guy named Kent really likes it too.

Once you have had it, you’ll want it again.

My sons’ grandmother’s version (see below) makes a complete meal.

Because I just got back from Mexico and cowgirl duties called (we had major fence repair this weekend), I don’t have step by step instructions…BUT…. don’t let step by step instructions keep you from trying it!

Go for it!

You will need these ingredients. Not in these quantities or these brands 😉

4 chicken breast cooked and cut up in bite pieces (or the very easy way, get a roast chicken and cut it up)
1 can cream of chicken soup
1 can cream of celery soup
1 1/2 cups sour cream
1 pkg. Ritz crackers
1 stick butter, melted
1 cup sliced almonds
Salt and pepper to taste!

Mix together in a bowl, the soups and sour cream. Place chicken in the bottom of a baking dish. Spread the mixture over chicken. Crumble the crackers over mixture. Melt 1 stick butter in Microwave for about 40 seconds on high or until melted and spoon over crackers. Sprinkle 1 cup of sliced almonds on top. Bake 30 minutes in preheated at 350 degree F oven.

You can serve with a vegetable or try this alternative using rice, this is the way Grandmother makes it!: Add 1 1/2 cup rice to 3 cups of water with 1 1/2 teaspoon salt, bring to a boil on high heat, and then lower to simmer, put a lid on the pot and cook for 20 minutes. After its cooked let stand 10 min. still covered. Sauté in sauce pan or skillet 1/2 stick oleo , 3/4 c. chopped onions, 3/4 c. chopped celery, 3/4 c. chopped bell pepper until tender, stirring often, add 1 1/2 Tablespoon minced garlic continue to cook for a minute or so, keep stirring. Add this mixture and the rice together in a large oblong baking dish that has been buttered and then proceed with the directions above.

Enjoy with a green salad, preferably your favorite oil & Balsamic vinegar dressing, and a loaf of good hard crust French bread with butter.
